This is restaurant style. The traditional Filipino way is you put the squash, beans and crabs and let it all simmer in a pot and I'm tellin ya it's the perfect sauce to a bowl of steamed white rice. Nothing beats that creamy white coconut sauce infused with all the flavors of crab fat, fermented shrimp paste, garlic, onions, chilis and ginger. So good!

I love ginataang alimango! It’s the crab fat that makes the dish special. Dungeness crab is delicious but it’s not like the giant mud crabs in the Philippines. I’m happy to see Filipino cooking in BA.

BIG mistake. You do NOT put the crab in live in hot water. It makes the meat taste bitter. It is important to paralyse it in cold water or to freeze for a few hours before cooking.

Gata is not coconut in Tagalog. Gata is coconut milk Buko is coconut Niyog is the older coconut which you shaved the meat off of and use that to make Gata.

I'm not squeamish about boiling crabs live, but the way it was done here can be a shameful waste! Always remove the carapace and guts! Always remove the bands! Leaving the rubber bands on the claws can completely destroy the flavour! Makes it taste like water that's been sitting in a rubber garden hose on a sunny day. Putrid chemical taste! Also, there is a lot of meat in the body of the crab. Cooking it live, or dead with the carapace on and guts in place, can discolour and change the flavour of most of the best meat! Big mistakes.

@givememore4free I am using my brain. If I fell into a swimming pool full of boiling water I'm positive I would not die instantly but I'd wish I was dead. I'm sure it would be a terrible way to go. I'd rather a sharp knife to my spinal column, which is how fisherman I know recommend killing them.

@opalfruitcake That’s exactly the point and what I’m saying. BIPOC like Sohla, Priya, Rick, Gaby, and Christine were confined to doing only their “ethnic” dishes while non-BIPOC could do any dishes, meanwhile Sohla has vastly more experience as was demonstrated countless times on the show. They have BIPOC chefs in boxes they had to stay in. That’s why I have utmost respect for Carla and Molly for showing solidarity with their peers and recognizing this mistreatment.

I still haven't seen fresh moringa/malunggay/kamunggay on the East Coast. Outside of my visit to Cebu, I've only seen it pop up in West Coast cooking videos, this one and Kenji Lopez-Alt's. Also, moringa is a superfood too. My dad has it growing in his backyard in Cebu and they use it for soups.
