Join Melissa Miranda as she makes pork tenderloin sandwiches with a fish sauce salsa verde on Hawaiian rolls. Don't be intimidated by the tenderloin cut -- it's your friend! It cooks extremely quickly and comes out beautifully tender, as long as you don't overcook it.

INGREDIENTS:
Pork
1½-2 lbs. pork tenderloin
1 tsp. garlic salt
1 tsp. Johnny’s Seasoning Salt or 1 tsp. each kosher salt and black pepper
½ tsp. ground coriander
Kosher salt
2 Tbsp. olive oil, divided

Salsa verde
1-2 garlic cloves
½ lemon, juiced
1 tsp. fish sauce (such as Squid Brand)
Kosher salt
1 cup parsley
1 cup cilantro
½ tsp. red pepper flakes
½ cup olive oil

Gravy
¼ cup white wine
2-4 Tbsp. chicken stock
1 Tbsp. unsalted butter

Assembly
1 head of fennel
½ lemon, juiced
Mini soft dinner rolls (such as King's Hawaiian or Martin's potato rolls) or pandesals (Filipino rolls)
Unsalted butter

Preheat your oven to 400°
00:00 Introduction
00:43 Prep the pork
02:17 Sear the pork for 2 minutes per side until all sides are well-browned
03:07 Transfer pork to 400° oven, roast until internal temperature is 145°, 15-20 minutes
03:22 Prep the fennel
04:41 Make the salsa verde
06:04 Check your pork and rotate to brown another side if it needs more time
07:23 Taste the salsa verde and adjust seasoning as needed
07:57 Make the gravy (use the pan you cooked the pork in if possible)
08:30 Deglaze the pan
08:58 Add chicken stock, butter and reduce until thickened
09:13 Assemble the sandwiches
11:00 Taste!

@Fio Mercado if you read what they actually said. Dr. Singh never said said seasoning cast iron isn't a thing. They did say that it doesn't add flavor which they are right about. This isn't a case of different ways to do the same thing, adding salt to your cast iron, while it is a common way of cleaning them, does nothing to build up a layer of seasoning.

That's also a super simple technique for making a pan sauce that can be used for any type of meat. Red wine also works. I like to add a splash of worcestershire and always make sure to finish with some butter for a silky shiny result.
