I mean he...acknowledged that slotting the fruit after cooking the chicken and fruit is...terrible. but he insists that the chicken is roasted...amazing that he didn't think at that point that they were braised together.

To me asian pears taste more like apples than pears... and golden apples are more closely correlated to pears, as your regular eat-out-of-hand-apple. So it might seem weird he picked the wrong fruit, but he is actually very close.

Chris: Hopefully in the second tasting I get some helpful information Also Chris, re apples: It tastes different, but I'm not changing it :) There's always something he makes his mind up about early and never second guesses. pear here, pork belly in the nachos, etc. Yet he overthinks things he's definitely right about lol

he doesn't think about the dish cohesively. korean dish: is it really a mystery ramps vs scallions? an asian dish without ginger? roasting chicken separately when you have a stew/braise going? probably not.

Kinda stressed me out how he overcomplicated the preparation of the dish as most Asian dishes especially stews are cooked in one pot. But he’s not Asian and probably doesn’t cook a lot of Asian stews so nailing almost all the ingredients was still freaking impressive.
