Welcome to Brad's World. Join Brad Leone in the Bon Appétit Test Kitchen as he makes grilled (and stuffed!) squid. To avoid getting tough and chewy squid, you should either grill it fast and hot or low and slow. These squid tubes are stuffed with tentacles, shrimp, scallions, garlic, ginger, spices and rice are dry rubbed with mustard powder, onion powder, salt & pepper, cayenne and coriander.

Here’s the recipe y’all! Stuffed squid recipes - squid tubes and all - Dry rub (equal parts of mustard powder, onion powder, salt n pep, cayenne pepper, ground coriander) - Shrimp - 3 scallions - 4 cloves of garlic chopped - ½ inch of grated ginger - 3 inch of lemon grass sliced - ½ freshno chili sliced - 1 tbsp of ponzu - 1 tbsp gochujang - 1 tbsp olive oil - 1.5 cup cooked rice - Furikake - Rough chopped parsley - Roughed chopped cilantro Instruction: 1. Coat the squid with the dry rub. (Tip: Flip them inside out in order to lock in the filling) 2. Preheat the grill on high heat 3. Make the filling: -chop shrimp and squid tentacles, put them in a bowl - Slice up the scallions, put them in a bowl - Put garlic,grated ginger, sliced lemongrass, sliced freshno chili, ponzu, gochujang,olive oil, pinch of dry rub, pinch of salt, and black pepper into a bowl - Cook the filling in a hot pan, no need more oil, as there’s olive oil in the filling. Cook until some of the misture evaporates to avoid mushy filling - In a different bowl, mix in rice, furikake, and cooked filling. Top with chopped parsley and cilantro. Add in a little splash of ponzu and olive oil. 4. Use a piping bag (pastry/ziploc will do) to stuff the squid with the filling and fill ¾ of the squid 5. Grill them until there’s a grill mark. Sprinkle some of the dry rub while grilling 6. Let them cool a bit before slicing
