If Ms=mass of salt, Mf=mass of stuff to ferment and p% is the salinity (proportion of total mass that is NaCl), then Ms=p/(1-p)Mf. If p=2 and Mp=300 then Ms=2/98*300 =6.122 (approx). If the salinity is 3% then Ms=3/97*300=9.278 (approx) etc. The point is that the salinity in NOT simply the proportion p times the total mass. However, for realistic salinities, the numbers will be close.

Blood Orange salad (not fermented, that's disgusting.) Knife-peel a bunch of blood oranges (no pith), then slice into bite-size rounds, eliminating any seeds. Sprinkle with S&P, half a lemon squeeze, and some feta cheese plus some baby arugula and top with good olive oil. Easy-peasy, delish.

a solid way to do small percentages is to remember that 1% is just the first number of a three digit number(any numbers in the tens/ones places are then the decimal) so for example 1% of 150g is 1.5g. 1% of 320g is 3.2g. then obviously multiply that by 2 for the 2%.
