My Guess as to why it didn't carbonate up is that Brad didn't add any sugar to the bottles for the secondary fermentation, Chances are the primary fermentation was complete and there were no sugars left to ferment for carbonation . Considering that there was ginger beer in the air lock the fermentation was likely aggressive and complete. Next time add a teaspoon of some kind of sugar, I like palm sugar and add that to the bottle.

I think that the reason it didnt ferment properly is becuase that fresh ginger didn't have the dry skin you usually see in ginger and a lot of the time the yeast lives in the skin of fruits, vegetables... is ginger a vegetable? Anyways its just a guess.

Is there chlorine in NYC tap water? That could kill your bugs.... Letting the tap water sit in the sun a few hours, or boiling it, will do much to remove the chlorine.
