Bon Appétit ...Read the Owner's Manuel. Never run the stand mixer/dough hook faster than #2 setting. Actually, a popular opinion is that you're ripping the gluten strands apart, running it that fast as well.

As someone who worked at a neapolitan joint for a while, it was funny to see them struggle with the peels. Definitely one of the make or break parts of a good pizza.

If you're using sourdough starter it needs to take place for the water and yeast. Normally Biga or Poolish is used for pizza supplemented with water flower.

*Amateur tip: I have a big wooden peel that I sprinkle a little corn meal onto. I shape out the dough on my big marble pastry stone then place it on the peel and make the pizza. I NEVER have a problem getting it off and into the oven on my pizza stone. Seems so obvious that you don't make the pizza with the sauce cheese and toppings and then struggle as they did here, to get it on the steel peel.
