Sounds crazy, but it’s the best way we found to sear a big batch of meat without overcooking it. This MeatballMethod™ yields deep color (a.k.a. flavor) along with tender meat. Is it absolutely necessary to transfer the noodles to cold water before laying them out on the parchment paper? I’m making it now and I forgot to put the noodles in cold water. Oh well guess I’ll find out.

As soon as I see people browning their meat, they get my respect,its actually really nice with mushrooms as well but its not authentic seen so many recipes with people having grey meat mixed with jarred sauce, just sad, I even saw one recipe where a women was washing her ground meat after cooking it 😂😂😂😂

Really, he can't make a bolognese ragu sauce withou preparing deep fried meatbols and then squashed them?. It"s he knowing that you can easily use dried lasagna and that you use cheese ( maybe 2 tipes) by grating them among layers? This is not lasagna is a time consuming invention. Sorry.

Bolognese chef here. I started watching this video 'cause you know... Chris. But I was totally frightened, 'cause you know... ragù and lasagne. Buuuut, at the very end I can say that this is probably the less messed up and true-ish version of an actual lasagna bolognese I've ever seen performed by a not-bolognese chef. We usually prefer using butter instead of oil both for cooking and greasing the tin, we don't use garlic (and, despite being a massive garlic lover, I cannot see it having space in the taste palette of a ragù) nor cayenne (but that I dont' hate, I might even probably want to try), but for the rest... a pretty accurate job. Thanks BA and Chris for not letting me down on this.

Chris, THANK YOU! Great video. I won't necessarily do it exactly like you, but I picked up some great ideas in the process. I like the browning the meat in meatballs approach. That is a great hack. Think I'll borrow that one. The cayenne in the béchamel is also something to copy for next time. I also feel kind of reaffirmed that I was at least doing some things right already. I do prefer a layer of chewy, bubbly mozzarella on the top, however.

The real and right way, ..... go to sprouts or whole foods, buy the 2 best jar sauces and a couple of italian links, saute links and add sauce, layer sauce, cheese, noodle, repeat, and bake covered 350 30 min, uncover bake another 30 min. Let rest, eat for next 3 days.

My advice: please test both and then you decide. I'd say casual cooking - which is preferred by many incl me, needless to say - and purchased, pre-cooked pasta works great together. My daughters never order lasagna out - and they are indeed cosmopolitans, sort of - because they know no one beats my casual - so far.

All I learned is it takes the equivalent manhours of ten Sicilian grandmothers 3 days in a Tuscan kitchen to make all the individual components of a lasagna! And that is why God created Stouffer's lasagna which you buy in the freezer and heat for 2 hours at 350 F until the cheese is melted!

I didn't know many traditional lasagnas use a white sauce made with milk (bechamel). Also Italians put a cup of milk in the tomato sauce to soften the acidity of the tomato

Hi! After you brown the meatballs and put them on a baking sheet, do you put them in the oven while the sauce comes together? Also, when boiling lasagna noodles can you add olive oil to help them not stick? Love this channel!

I made this recipe in full yesterday. It took four hours of labor over a 6 hour period. The lasagna is basically a vehicle for whole milk. I miss the forward taste of ricotta. Next time I will slightly decrease the milk and butter and increase the cheese and cheese types for the bachemel. The bolognase was very good including on it's own. Next time I will use only a half cup of milk though. Rate: 4/7 cups of whole milk actually needed.
