His first try "actual" ingredient percentage should have been way high than 69% considering there is so many things in the dish and he got sooo many of them and they were correct. Just my opinion though lol

I've never seen, heard of, or made gumbo myself without the trinity (bell pepper, celery and onion), but Leah Chase is literally the godmother of modern creole cooking, so maybe everyone else has been wrog the whole time. Also Delany with the canadian tux

Watching this now is like reflecting on warm happy family memories and then realising your parents were in the process of getting a divorce and the friendly house cleaner was actually a bonded labour slave, and your weird uncle wasn’t on holiday and was really in prison for white collar crimes. The rapport between the team was nice to see, but I can’t unlearn the family secrets.

I've never seen anyone put tomato in gumbo, but the Holy Trinity is often there, with a more traditional take being just onion. I put celery and pepper in mine, lol.

It’s so interesting that he’s letting his general knowledge of what gumbo/jambalaya usually consists of overpower what he’s actually tasting. He didn’t get any green pepper, celery, or tomato in any of his taste tests but assumed they must be included because, like Brad said, the “holy trinity” thing and jambalaya is generally in a tomato based sauce. I really want to see him taste the two dishes blindfolded side by side instead of waiting so long between tastings. He’s got such a good palate and he’s so talented.

My favorite thing about cooking is that it's an art. Just like all art, it is open to interpretation and personal opinion/taste. Thankfully, no one is forcing their own way of doing things on everyone else as "the only way". If it tastes good to you, then it is good (to you!). This world doesn't have room for all of the - "OMG I cannot believe you're putting _ _ _ _ _ _ on _ _ _ _ _ _ !" or "That's not REAL _ _ _ _ _ , only REAL _ _ _ _ _ is made in _ _ _ _ _ _ " - judgement and hatred anymore. If someone did, say, make a deep-dish pizza and call it 'New York style', then they would be incorrect in calling it that, but it would still be pizza & someone would still like it. Enjoy making/cooking/eating the foods that YOU like and let's stop worrying about what everyone else is doing, whaddaya say? (●'◡'●)
